Recipes Featuring Patsys Puttanesca Sauce
| STRIPED
BASS PUTTANESCA |
- 2 cups (16 ounces) Patsys Puttanesca
Sauce
- 1/4 cup dry white wine
- 1/2 cup water
- 2 striped bass fillets, about 10 ounces each
|
In a medium skillet,
bring Patsys Puttanesca Sauce, white
wine, and water to a boil. Add fillets, skin-side
down. Reduce heat, cover, and simmer 8 to 10 minutes,
occasionally spooning sauce over fillets.
Yield: 2 servings.

RIGATONI
WITH ROASTED EGGPLANT
ALLA PUTTANESCA |
- 1 pound rigatoni pasta, cooked to package directions
- 2 medium eggplants (about 1 pound each), unpeeled
- 3 tablespoons olive oil
- 3 cups (24 ounces) Patsys Puttanesca
Sauce
- 1/2 cup water

Preheat oven to 350 degrees F. Trim the eggplants
and cut into 1/2-inch cubes. Grease the bottom of
a heatproof baking dish with olive oil and add eggplant.
Bake for 30 minutes, occasionally turning eggplant
to ensure even browning. In a large saucepan, bring
Patsys Puttanesca Sauce to a boil and
add roasted eggplant and water. Reduce heat, cover,
and simmer for 7 minutes. Serve over pasta.
Yield: 4 to 6 servings |
| SOFT-SHELL
CRABS PROVENZALE |
- 8 soft-shell crabs, cleaned
- 1/2 cup all-purpose flour, for dredging
- 1/2 cup olive oil
- 3 cups (24 ounces) Patsys Puttanesca
Sauce
- 1/4 cup dry white wine
- 1/2 cup water

Dredge soft-shell crabs in flour, shaking
off the excess. Heat olive oil in a large skillet
and add the crabs. Sauté each side for 2 minutes,
until red and crisp. (Heavy splattering may necessitate
the use of a cover.) Drain excess oil from skillet
and add Patsys Puttanesca Sauce, white
wine and water. Bring to a boil. Reduce heat, cover,
and simmer for 8 minutes. Salt and pepper, to taste.
Yield: 4 servings
