Recipes Featuring Patsy’s Marinara Sauce


 

PASTA PRIMAVERA
  • 1 pound spirali pasta (corkscrews), cooked to package directions
  • 4 medium spears asparagus
  • 1 small head broccoli, stemmed and cut into florets
  • 1 small carrot, peeled
  • 4 large mushrooms, cleaned
  • 1 small zucchini, ends trimmed
  • 1/4 cup olive oil
  • 1 cup chopped onions
  • 1/4 cup green peas, cooked
  • 1/2 cup chopped fresh basil
  • 1/2 cup chopped fresh parsley
  • 1 cup chicken stock, or water
  • 1/4 cup dry white wine
  • 3 cups (24 ounces) Patsy’s Marinara Sauce
  • 1/4 cup grated Parmesan cheese
Snap off and discard the tough ends of the asparagus. Cut the asparagus, broccoli florets, carrot, mushrooms and zucchini into bite-size pieces and blanch in boiling water for 2 minutes. Drain, rinse under cold water and set aside. Heat olive oil in a large skillet and saut the onions until lightly browned. Add blanched vegetables and sauté for 1 minute. Add green peas, basil, parsley, stock, wine, and Patsy’s Marinara Sauce. Bring to a boil, reduce heat, and simmer for 2 minutes. Salt and pepper, to taste. Serve over pasta. Sprinkle with Parmesan cheese.
Yield: 4 servings

 

PASTA FAGIOLI (BEANS AND MACARONI SOUP)
  • 1/2 pound (2 cups) tubetti pasta or elbow macaroni, cooked to package directions
  • 1/4 cup olive oil
  • 1 cup diced onions
  • 2 cups chicken stock, or water
  • 1 can (15 ounces) cannellini beans, drained and rinsed well
  • 3 cups (24 ounces) Patsy’s Marinara Sauce
Heat olive oil in a deep skillet and sauté the onions until lightly browned. Add stock, beans, and Patsy’s Marinara Sauce and bring to a boil. Add the cooked pasta. Reduce heat and simmer for 1 minute. Salt and pepper, to taste. Yield: 6 servings

 

SHRIMP MARINARA
  • 1 pound capellini pasta (angel hair), cooked to package directions
  • 3 cups (24 ounces) Patsy’s Marinara Sauce
  • 1/4 cup dry white wine
  • 1/2 cup water
  • 1 to 1 1/2 pounds large or extra-large shrimp, peeled and deveined
In a large saucepan, bring Patsy’s Marinara Sauce to a boil. Add wine, water and shrimp. Reduce heat, cover, and simmer for 7 minutes. Salt and pepper, to taste. Serve over pasta. Yield: 4 servings
